Why can’t I get crema from my Silvia Rancilio espresso machine?

It’s only taking about 16 seconds to fill the cup. Way too fast. Any suggestions will be much appreciated.

If it’s coming out that fast, you either don’t have the grind fine enough and/or you’re not tamping down properly.

You need a proper grinder (a regular coffee grinder won’t grind fine enough for espresso). I have a Silvia & use a Rocky grinder; it took me a few tries to find the right grind size & tamp pressure before I got proper extraction & crema.

If you haven’t done so yet, throw away the plastic tamper & get a good, solid metal one. It makes a difference.
